I LOVE baking. Cookies, cakes, fudge, cupcakes, muffins, pastries. Anything and everything, I love it! It’s something I do when I’m not feeling great and I want to cheer myself up. And also recently, a new way for me and A to spend time together now she’s a bit older. So today we were having a lazy day, and this afternoon we baked a batch of Double Decker Cookies!
One of the easiest things you can bake is a cookie, but it is so hard to get them right. They are either too chewy or not chewy enough, too hard or way too soft, it’s hard to find a happy medium. These cookies are amazing every time, chewy and light!
We made these with Double Decker bars, mainly to free up some cupboard space! But I have made these in the past with Maltesers, Galaxy, Smarties, Mars Bars, whatever your favourite chocolate/sweet is, throw them in the bowl and make magic!
So, for the cookies you will need:
– a greased/lined baking tray (I hardly ever use baking paper, I just smother the tray in butter!)
– a bowl, scales and a wooden spoon
– 1 egg
– 125g of butter
– 100g light brown sugar, 125g caster sugar
– 225g self raising flour
– your chosen chocolate/sweets
And that’s it, simple!
Firstly, preheat your oven to 190 degrees and line/grease your baking tray. Then mix the sugars with the butter, add the egg then the flour. Once it’s completely mixed in, throw in your chocolate/sweets and make sure it’s evenly distributed.
Lastly, in whatever fashion you like, put the dough in balls/shapes on the baking tray. Then put them in the oven for 8 minutes. While they’re in the oven, you HAVE to eat the left over cookie dough, it’s the law!
If you want them very soft and doughy, take them out. If not, play it minute by minute until they’re cooked to perfection for you! I had them in the oven for 11 minutes and they were perfect. When they’re done, take them out and leave them to cool a bit. Wash up while they’re cooling then sit on the sofa and eat them all! I joke, but it’s very tempting not to once you’ve tried them!
